When the heating begins, one of the strips expands slightly more than the other and as a result the bridge bends and the circuit breaks. The bridge is up, the flow of electricity stops and the room starts to cool down. Similarly, when the cooling starts, the strips gradually become straight again and the connection is reestablished allowing the flow of electricity and the heating of the room. This is a continuous process. Gas-filled bellows on the other hand is quite slow to react to temperature changes, so they may not be great option.
